Atta Cookies (Biscuits)
Enjoy the perfect crunch with your evening tea using these wholesome, bakery-style cookies made right at home with premium Agrim Chakki Atta.

Ingredients

  • The Dry Ingredients: 1.5 cups Agrim Chakki Atta; 1/2 tsp baking powder; 1/4 tsp baking soda; A pinch of salt; 2 tbsp Agrim Suji (for extra crispness).
  • The Wet Ingredients: 1/2 cup unsalted butter (softened at room temperature); 1/2 cup powdered sugar; 1/2 tsp cardamom powder (or 1 tsp vanilla extract); 2-3 tbsp milk (as needed).
  • The Garnish: Chopped almonds or pistachios (optional).

Instructions to Cook

  1. Cream Butter and Sugar: In a large bowl, whisk the softened butter and powdered sugar together until the mixture becomes light, pale, and fluffy. Add the cardamom powder and mix well.
  2. Combine the Flours: Sift the Agrim Chakki Atta, baking powder, baking soda, and salt directly into the creamy butter mixture. Stir in the Agrim Suji.
  3. Form the Dough: Gently mix everything with your fingers. Add milk one tablespoon at a time just until the mixture binds together into a soft dough. Do not over-knead it.
  4. Shape the Cookies: Pinch out small portions of the dough, roll them into smooth balls, and flatten them slightly between your palms. Place them evenly spaced on a baking tray lined with parchment paper. Press a few chopped nuts on top of each cookie.
  5. Bake: Bake in a preheated oven at 170°C (340°F) for 18-20 minutes, or until the bottom edges turn a beautiful golden brown. Remove from the oven and let them cool completely on a wire rack before serving.

Tips & Variations

  • The Crispiness Secret: Adding a small amount of Agrim Suji to the Agrim Chakki Atta provides a beautiful, crumbly texture typical of traditional bakery biscuits.
  • Butter Temperature: Ensure your butter is softened at room temperature, not melted. Melted butter will make the cookies spread too flat while baking.
  • Let Them Cool: The cookies will feel a bit soft right out of the oven. Do not overbake them! They will firm up and achieve their signature crunch as they cool down to room temperature.
